You can apply custom prefixes/suffixes for purchase orders by going to:

Settings > All Settings > General

For instance, you can set the month and year of your order ID.

Order ID Prefix as DEC-

Order ID Suffix as -2023

Your Final Order ID will appear as DEC-1038-2023
